Mr. Larson is student teaching with Mrs. Schott until April 1st. He is a college student from the University of Wisconsin-Whitewater and will be graduating in May with a Bachelor of Science teaching degree in K-12 Physical Education. He is originally from Racine, Wisconsin and currently living in Monroe.

Middle School
Congratulations to David Laughlin on being recognized as the middle school physical education student of the month. David amazes me! His competitiveness, enthusiasm, and skill level are all top-notch in physical education. The kindness and thoughtfulness he shows his classmates result in his friends being very helpful and encouraging to him. I can count on David giving me 100% effort in every activity we do. He wants to do well and although he shows frustrations when he is unsuccessful, he uses it as motivation to give it another try!

I like to play Ninja Warrior. Ninja Warriors are very strong.

I go to bowling.

I would eat kolberwurst, tomatoes, and French toast.

I have two dogs. Princess is a chiagle (Chihuahua/beagle) and Fergus is a German shepherd.

My favorite holiday is Christmas. I get big presents.
What do you do to keep fit?
I run my obstacle courses, dance, and swim.

Congratulations to Lillyann Baertschi on being recognized as the high school physical education student of the month. Lillyann has never been known to be a student who is outspoken, however she definitely is a student who leads by example. No matter what the task needs to be completed, she will always follow the rules and try her best in any situation. She currently is in a class where she is the only girl. But, she doesn't shy away or back down inspite of that. I admire her ability and her willingness to get along with every student. She is not only an outstanding student and citizen in the physical education class setting, but she takes all of these great attributes to all of her other classes where she greatly excels.

FITNESSGRAM RECORD BOARD
October was fitness testing month for Albany students in grades 3 through 12. Most students have completed the fall FITNESSGRAM.
FITNESSGRAM is a comprehensive health-related fitness assessment. It includes a variety of health related physical fitness tests designed to assess cardiovascular fitness (aerobic capacity), muscle strength, muscular endurance, flexibility, and body composition. The fitness items are scored using criterion-referenced standards. These standards are age and gender specific and are established based on how fit children need to be for good health. Through the use of these standards, a “healthy fitness zone” is created. Students completed the mile, pacer, curl-up, push-up, sit & reach, trunk lift, height, weight, & percent body fat assessments.

KITCHEN DELISH
Teriyaki Chicken and Rice Casserole
yield: 8 (1 & 1/4 CUP) SERVINGS
INGREDIENTS:

¾ cup low sodium soy sauce
-
½ cup water
-
1/3 cup packed brown sugar
-
1 tablespoon honey
-
¾ teaspoon ground ginger
-
1 teaspoon olive oil
-
½ teaspoon minced garlic
-
2 tablespoons corn starch
-
2 tablespoons water
-
1 ½ lbs boneless skinless chicken breasts
-
32 oz frozen mixed vegetables (look for the un-sauced stir fry or Asian varieties)
-
1 cup drained canned pineapple tidbits or chunks (packed in juice or with no added sugar)
-
3 cups cooked brown rice

ELEMENTARY School
Congratulations to Allie Dahl on being recognized as the elementary school physical education student of the month. Allie is so energetic and a joy to have in class. It does not matter the activity we are doing in physical education, I can always count on Allie to be excited about it and give 100% effort. She’s looks forward to being active and understands its importance. Allie also amazes me at her skill level. Her skill and cognitive abilities are above her second grade age when it comes to physical activities and games. I look forward to teaching Allie in physical education in the upcoming years and am eager to see the direction she chooses to go in athletics in the future.

DIRECTIONS:
-
Pre-heat the oven to 350.
-
Combine the soy sauce, the ½ cup water, the brown sugar, honey, ginger, olive oil and garlic in a small saucepan and cover. Bring to a boil over medium heat. Remove lid and cook for one minute once boiling.
-
While waiting for the sauce to come to a boil, stir together the corn starch and 2 tablespoons of water in a separate dish until smooth to form a slurry. Once the sauce is boiling, add the slurry to the saucepan and stir in to combine. Cook for another minute until the sauce starts to thicken and then remove from heat.

Lay the raw chicken breasts flat in a 9×13 casserole dish and pour about a cup of the sauce over top of the chicken. Place the chicken in the oven and cook for 30-35 minutes until breasts are cooked through*. Remove the dish from the oven and shred the chicken right in the dish using two forks.

*While the chicken is cooking, steam or cook your frozen vegetables according to package directions.

When the chicken is shredded and the vegetables are cooked, add the vegetables, pineapple and rice to the casserole dish with the chicken. Add most of the remaining sauce, reserving a bit to drizzle over the top when finished. Stir everything together in the casserole dish until well combined. Return the dish to the oven and cook for 15 minutes. Remove from the oven, drizzle with the remaining sauce and serve.
